Sour Cream Mashed Potato

This simple side dish is everybody’s favorite on the dinner table. It goes with steaks, fried chicken, pork, sausage or other dishes. You can add mashed potato to breakfast, lunch or dinner, no body will complain. Add gravy and cheese if you want.

To make Shepherd’s pie:  Saute ground meat (pork, beef, lamb…) with onions until brown and fragrant. Add carrots and peas, cook in a gravy or sauce until combined. Put the meat mixture in a baking dish and topped with a layer of mashed potato before it is baked. You can add cheese any time you want, optional.

Cook mashed potato in the preheated oven at 375°F for 30 minutes until golden brown.

Shepherd’s pie: Prepare ground meat and vegetable, add mashed potato on top before baking in the oven. Cook until golden brown on top.

Sour Cream Mashed Potato

6 russet potatoes (3 pounds, not more)
1 cup (or less) regular whole milk (or lactose free)
4 tablespoons butter, melted in microwave
1/4 cup (more or less) regular sour cream
Salt, black pepper, garlic salt, as needed

How to make it:

Peel the potatoes and cut into 1-inch cubes. Place in a pot and fill with cold water about 1-inch above the potatoes, add 1 teaspoon salt. Cook on high heat, cover, and bring to a boil. Once boiling, uncover, stir well. Decrease the heat to medium, cook until tender, about 8 to 10 minutes. Drain the water. Use a potato masher, mash until smooth. Add butter, milk and sour cream a little at a time to get the texture you need. Also add salt, garlic salt and black pepper for good flavor.

(Tips:  Mashed potato should be a little on the wet side before going into the oven. It will dry up once cooked in the oven. Reheating leftover mashed potato will also make it dry. You can use half water and half chicken broth instead of milk.)

Preheat the oven to 375°F.  Cook time:  30 to 35 minutes.

Put mashed potato in a baking dish (9 x 9), spread evenly. (Sprinkle cheese on top if you want, optional.) Place dish in the oven and bake for about 30 minutes or until the cheese is melted and golden brown on top. Don’t cover it. Homemade mashed potato is the best, rustic, delicious. Makes 5 to 6 servings.
