Bitter Melon Soup with Chicken or Turkey

In Chinese medicine, bitter melons make excellent herbal remedies for treating bronchitis, stomach problems and sore throats. It is also great for preventing high blood pressure, high cholesterol and type 2 diabetic. Its cooling properties help to cool your body in the summer and increase your immune system. As a health precaution, women should not eat bitter melons during pregnancy and nursing because of its cleansing effects.

Bitter melon soup is good for your body in the summer. Adding vegetables like tomato and carrot can reduce the bitter taste and balance the flavor beautifully. It is not a good idea to use too much bitter melons in the soup, balance is the key. You can use chicken or turkey meatballs. I often brown the meat first before adding it to the soup. This is probably my best bitter melon soup so far. I will make it again when we have our garden next year. We plant bitter melons.

Season meat with salt and black pepper, brown in saute pan, put aside.

Saute onion, ginger, garlic, celery, bitter melons and carrots until translucent, add a pinch of salt. Add tomato, mix with veggie. Also add chicken, chicken broth and water, cook until boiling. Make sure to remove extra fat and foam on top. Cover the pot, cook on medium low heat for 30 minutes. Stir and check when necessary.

Ingredients and Instructions

1 small bitter melon, 1 medium tomato, cut into small pieces
2 carrots, 2 stalks celery, diced
1 large onion, 1 piece ginger, 2 cloves garlic, chopped
12 oz diced chicken or ground turkey made into meatballs
32 oz low-sodium chicken broth, water as needed for soup

  1. A very un-usual soup. The taste is rather tangy with a hint of spiciness. When you combine bitter melon with carrots and ginger, you get a distinct flavor. Really good, even though I am not a soup person.
