Chicken with Bell Pepper in Black Bean Sauce

You can make a relatively fast and delicious meal by just knowing a few basic cooking techniques and using simple ingredients. That said, stir-fry is simple and fast. All you need is to put everything into a hot skillet with hot oil and stir together. Use your nose to guide you. If it smells good then it is almost done. Season the dish as you go, salt, black pepper, sherry wine, soy sauce, oyster sauce, sugar, sesame oil, just to name a few.

This is a classic, everyday Chinese dish using black bean sauce. People cook it all the time because it is easy to make and it tastes really good, perfect to eat with steamed rice. It is similar to Chinese takeout pepper steak (豉椒牛) but with a milder flavor. I use chicken instead of beef because we seldom eat red meat. And I don’t like to make tons of brown gravy to drown the meat. Get the recipe here to make your own black bean chili sauce. Store bought black bean garlic sauce works fine too, but it is quite salty.

Chili Sauce (豉椒炒雞球)

Cut the chicken into bite size pieces. Season with salt, 1/2 tablespoon black bean chili sauce and oil, 1 tablespoon wine and 1/2 tablespoon cornstarch. Mix well and set aside.

In a frying pan over medium high heat, add oil, wait until hot. Add onion, pepper, garlic and ginger, pinch of salt. Quickly stir fry for 30 seconds, add 1 tablespoon black bean sauce and oil, continue to stir fry until fragrant, about 1 minute. Dish up and set aside.

In the same frying pan, add more oil, wait until hot again. Add chicken and lay each piece flat touching the pan. Let it brown just a little, turn the meat to the other side and cook until light brown. Stir and cook chicken until almost done, return veggie, mix with meat. Add soy sauce, oyster sauce and sugar, quickly stir and cook on high heat for 2 minutes until all the flavor combined. (Okay to splash in 1 tablespoon of sherry wine if it gets too dry, more flavor anyway.) Add green onions, toss, toss, done. Serve with steamed jasmine rice or noodles.

Ingredients and Instructions

1 chicken breast, 2 chicken thighs, boneless, skinless
1 red bell pepper, 1 large onion, rough chopped
2 slices ginger, 2 cloves garlic, chopped
1 bunch green onion, cut into 1-inch sections, garnish
1/2 tablespoon soy sauce
1/2 tablespoon oyster sauce
1 teaspoon sugar, more or less as you need
1/2 tablespoon black bean chili sauce and oil to marinate chicken
1 tablespoon black bean chili sauce and oil to cook veggie
