Cantonese Snow Peapod Pepper Steak

Pepper steak 辣椒牛 is a simple, old school dish that many Chinese people like to make on special holidays or weekends. You can make it spicy by adding hot chili peppers, otherwise the dish is pretty mild but tasty. It is also one of the popular dishes in Chinese restaurants. Today I simply add snow peapods to the recipe. We like how things turned out. The snow peapods go perfectly with the rich beef flavor. This is one of the few beef dishes that we honestly enjoy eating besides a good, flavorful T-bone steak.

Unlike the name suggests, Swiss steak does not come from Switzerland or has anything to do with Switzerland at all. But rather the beef meat has been pounded or rolled in order to make it tender, a process or technique called “Swissing.” Learn something new everyday. Swiss steak is lean and inexpensive, easy to find in the stores. People often slow cook Swiss steak into hearty beef tomato stews, serve over rice or noodles. I may try that someday.

Cantonese Snow Peapod Pepper Steak 雪豆辣椒牛

1 pound swissed steak, thinly sliced against grains
1 pound snow peapod, remove strains, cut into halves if too big
1 green bell pepper, 1 or 2 serrano peppers, thinly sliced
1 yellow onion, 3 cloves garlic, 2 slices ginger, chopped
1/2 tablespoon (leveled) fermented black beans, not more
2 tablespoons oyster sauce, 1/2 teaspoon sesame oil (optional)

 

Season beef with salt, black pepper, garlic salt, 1/2 teaspoon paprika, 1 teaspoon sherry wine, 1/4 teaspoon regular soy sauce, 1/2 tablespoon cornstarch, mix well. Add 1/2 teaspoon sesame oil at the end, mix well. Let marinate for 10 minutes. In a frying pan over medium high heat, add oil, wait until hot. Pan fry until beef no longer pink, toss in ginger and 1 tablespoon chopped onion, stir, stir, 1 minute. Dish up.

In the same pan, add oil, wait until hot. Add onion, garlic, fermented black beans, saute for 1 minute. Add serrano and bell peppers, salt and black pepper, quickly stir for 1 minute. Add snow pea pods, a little salt and black pepper, stir fry for 1 minute. Add beef, and 2 tablespoons oyster sauce, mix with veggie. Stir fry on high heat for 2 to 3 minutes until meat is done and veggie is crisp and translucent. Okay to add 1/2 teaspoon sesame oil at the end, but it is not necessary. Delicious.

Tips:  If you like, use half green pepper and half red pepper for pretty colors. Okay to remove some serrano seeds, it is pretty hot.
