Summer is a good time to eat bitter melon. We are very lucky to have a vegetable garden in our backyard. My favorite way to cook bitter melon is to stir fry with black bean and garlic, a simple and flavorful dish. Kids normal don’t like the bitter taste. It takes a while to get used to the taste. Char Siu Chicken with Chinese Bitter Melon
Originally I made this chicken dish with leftover char siu sauce from the refrigerator. I did not plan ahead or marinate the chicken like we normally do when making char siu pork. I quickly pan fried the chicken thighs until lightly brown, about 80% done. I spooned the char siu sauce on both sides, continued to pan fry until both sides get caramelized and chicken nicely glazed and turned dark brown. OMG, was it good or what?
