Mushroom Rice Pilaf and Tuna Egg Foo Young

Okay, this is not exactly a traditional Chinese dish. However it is my latest creation of a simple meal. Without a lot of fuzz in the kitchen and fancy ingredients, an impressive healthy dinner is ready in no time. I normally like to pan fry a sunny side up egg, put it on top of the rice pilaf and then drizzle with a little bit of soy sauce. How pretty is that? Make the tuna patties if you have time, it is really tasty. You can also make a dipping sauce or simple gravy for the patties, either way is good. It is a perfect meatless dinner.

Homey, flavorful mushroom rice pilaf with tuna egg foo young.

Chinese Mushroom Rice Pilaf 冬菇香飯

9 Chinese dry black mushrooms 味全牌花菇, soak in water for 30 minutes
1 yellow onion, finely chopped, 2 tablespoons oyster sauce
2/3 cup low sodium chicken broth mixed with 1/2 teaspoon cornstarch
1 bunch green onions, finely chopped
2 (6 oz) cups raw jasmine rice, cooked in rice cooker
Optional:  Sunny side up pan fried eggs

In the skillet with hot oil, saute onion, mushroom (drained, diced or sliced), add salt and black pepper, oyster sauce. Add chicken broth, cook until soft and thicken, turn off heat. Add green onions and mix with mushrooms.

Add the mushroom mixture to the cooked rice in the cooker, mix well, cover and keep warm. Serve rice in a bowl with a sunny side up egg, simple and delicious. You can also serve rice with tuna egg foo young, see recipe below.

 

Tuna Egg Foo Young

1 small onion, finely chopped, sauteed until soft, seasoned with salt and black pepper
2 (5 oz Bumble Bee) cans chunk light tuna, drained, add salt and black pepper
5 Eggs (beaten, add a little salt), 1/4 cup (or more) roasted cashew nuts, chopped

Mix everything together in a bowl. In a hot skillet with olive oil, scoop and drop 8 patties, pan fry until golden brown on both sides. Make a dipping sauce or gravy for the patties if you want.

  1. Incredibly good dish. I was surprised at how good the mushrooms tasted–and I usually don’t like mushrooms. This version of egg foo young is just moist enough and tasty enough to blend perfectly with the rice and mushrooms. Love it!
