Christmas is the season for cookies, lots of cookies, different kinds, different shapes, different flavors, different colors. No doubt, cookies are globally popular, no matter what part of the world. In my household, we don’t need any excuses, we make cookies whenever we want. This year I revisited a ginger cookie recipe and made it much better. My child-like excitement grows when the warm, holiday aroma fills the house.

Sweet, fragrant, warm, gingery, great texture—finally, a ginger cookie has everything I want.

Warm and spicy ginger cookies.

Fancy Ginger Spice Cookies

1 cup light brown sugar, 3/4 cup canola oil
1/4 cup molasses (not more), 1 large egg, lightly beaten
2 cups all-purpose flour, unbleached
2 teaspoons baking soda, 1/4 teaspoon salt
1/2 teaspoon ground cloves, 1/2 teaspoon ground turmeric
1 teaspoon ground cinnamon, 2 teaspoons ground ginger
1/3 cup white sugar on a plate to roll the cookies in before baking

Preheat oven to 375 degrees F. Cook time:
14 to 15 minutes for crispy cookies.
13 minutes if you like chewy cookies.

Mix the brown sugar, oil, molasses and egg in one bowl. Mix flour, baking soda, salt, cloves, cinnamon, turmeric and ginger in another. Don’t use any extra molasses, or you’ll kill the ginger flavor.

Add the dry stuff to the wet stuff, mix until you have sticky dough. Roll the dough into balls about an inch around, then roll them in some white sugar on a plate before putting them on a non-stick cookie sheet, ungreased. Press ball shaped cookie dough very slightly. (Press too flat will not get the deep, pretty cracks.)

Bake in oven for 14 to 15 minutes if you like crispy cookies, 13 minutes if you like soft chewy cookies. Wait a few minutes, let cookies cool completely before eating. Sweet, fragrant, warm, gingery, great texture—finally, a ginger cookie has everything I want.
