Soy Sauce Chow Fun with Bean Sprouts


Chow fun (stir fried flat rice noodles or sar hor fun 沙河粉) is a common dish in Chinese cooking, many home cooks know how to make it. Soy sauce chow fun started out as a poor people’s dish, used mainly flat rice noodles, bean sprouts and green onions, flavored with soy sauce. People love chow fun because it is very filling and tasty. Restaurants add beef to the dish for more flavors and more money. Beef chow fun 干炒牛河 is very popular in Chinese dim sum restaurants.

I am a big fan of rice noodles, but not good cooking it. But I am happy this noodle dish turned out okay, it tastes good anyway. The eggs go really well with the noodles and bean sprouts. The serrano peppers add a little bit of heat to the dish, nice.

Soy Sauce Chow Fun with Bean Sprouts

A fresh, tasty and filling noodle dish.

Ingredients and Instructions

1 pack flat rice noodle sticks (sar hor fun 沙河粉, 1/2 package, 8 oz)
3 large eggs, pan fried, cut into small strips
1 large onion, cut into thin pieces
2 or 3 cups fresh bean sprouts, use more or less as you like
2 serrano peppers (red and green), remove seeds, cut into thin pieces
4 green onions, cut into 1-inch pieces, green parts for garnish
1 teaspoon sesame oil, add to noodles last

Mix sauce in a bowl:
1 teaspoon sugar, 2 teaspoons water, (1/2 teaspoon dark vinegar, optional)
2 teaspoons dark soy sauce, 4 teaspoons regular soy sauce


Add dry rice noodle sticks to a pot of boiling water with salt and oil, remove from heat. Let soak in hot water for 9 minutes, gently mix and stir for even cooking. Drain well, put noodles in a strainer, set aside. While noodles are soaking, prepare eggs and veggie.

Beat the eggs, add a little salt, pan fry until golden, cut into small pieces. Set aside. In a big wok with hot oil, add onion, serrano peppers and bean sprouts, pinch of salt, black pepper and sugar, stir fry until crisp tender, dish up and set aside.

In the same wok add 2 tablespoons oil, wait until hot. Add white parts of green onions, quickly stir fry for 30 seconds, then add rice noodles, stir fry over high heat. Add soy sauce mixture, mix well with noodles, stir, stir. Add bean sprouts, stir, stir. Add eggs, stir, stir. Cover the wok for 1 minute to help soften noodles and veggie if necessary. Add green parts of green onions, 1 teaspoon sesame oil, 1 teaspoon cooking oil, stir with noodles for a fantastic rice noodle dish.
