Serrano Bacon Beans and Fried Eggs

This quick stir-fry makes a delicious filling for breakfast wraps, snack wraps, party wraps, or lettuce wraps. You can use it with cheese, eggs, or rice to create endless possibilities. I like to use the bacon-bean mixture to make fried eggs or fried rice. They are so delicious we just love it. You can even make a fancy frittata, don’t forget the cheese!

2 cups chopped green beans, 1 small onion, 2 serrano peppers (remove seeds)
1/4 cup bacon pieces  (Real Bacon Pieces or cook 5 strips bacon then chop it)

In a skillet with hot oil on medium high heat, add chopped beans, stir and cook 1 minute. Add onion, serrano pepper, season with salt and black pepper. Stir fry until vegetables translucent, add the bacon pieces, keep stirring. Cook until fragrant and flavors combined, dish up. It only takes 7 to 10 minutes to cook the dish.

Ingredients and Instructions

2 cups chopped green beans, 1 small onion, 2 serrano peppers (remove seeds)

6 large eggs, beaten
2 garlic bread (Naan), lightly warmed in a frying pan

 

In a skillet with hot oil on medium high heat, add chopped beans, stir and cook 1 minute. Add onion, serrano pepper, season with salt and black pepper. Stir fry until vegetables translucent, add the bacon pieces, keep stirring. Cook until fragrant and flavors combined, dish up. Set aside.

Add a little salt to the eggs. Add the bean mixture to the eggs. Add oil in a hot skillet, stir in the egg mixture, pan fried until golden brown. Cut into wedges and serve with garlic bread.

Another option is to cut the fried eggs into 1×3-inch long strips and served on top of beef noodle soup. To make breakfast wraps, you can scramble the eggs with the bacon-bean mixture. You can even make a fancy frittata, don’t forget the cheese!

  1. This is an incredibly good breakfast! Better than the breakfast burrito–with or without the cheese. Have it with flat bread too.
