Bitter Melon Stir-Fry with Mushroom Cantonese Style 苦瓜炒蘑菇粵菜

The traditional Cantonese home cooking is very basic and simple, the ingredients are fresh and the seasonings are usually soy sauce, salt, wine, sugar and sesame oil. Ginger, garlic, fermented black bean and green onion are popular aromatic ingredients used in Chinese cooking. What you see is what you get, Cantonese cuisine is meant for eating, not for looking. Naturally we want to taste each ingredient as what it is.

This bitter melon dish is not hard to make if you can get everything prepared ahead of time. I use fresh mushroom instead of the dried mushroom. We love the rich flavor of this dish.

Ingredients and Instructions

1 bitter melon, remove seeds, cut into thin slices
1 tablespoon fermented black beans
1 chopped onion, 2 cloves chopped garlic
1 small chunk ginger, sliced, cut into strips
2 serrano peppers, remove seeds, sliced round
1 tray pack (8 oz) fresh white mushrooms, cut into halves

Mix Sauce in Bowl:
1 teaspoon sugar, 1 teaspoon dark soy sauce, 1 teaspoon sherry wine (optional)
2 teaspoons regular soy sauce, 1 teaspoon oyster sauce, 1/4 teaspoon sesame oil

Mix Cornstarch Water in Bowl:
1/2 teaspoon cornstarch, mix with 1/2 cup low sodium chicken broth (or water)


In a wok add 2 tablespoons oil on high heat, wait until hot. Add the bitter melons on one side, add onions, serrano peppers, fermented black beans, ginger and garlic on the other side. Quickly stir fry for about 2 minutes, add sugar, salt, black pepper and 2 tablespoons cornstarch water, keep stirring until fragrant and translucent.

Add mushrooms, a little salt and black pepper, stir fry for another minute or so. Add sauce mixture, stir, stir. Add 4-6 tablespoons cornstarch water as needed, quickly stir and cook 2-3 minutes until bitter melons are crunchy and ready, don’t over cook. You can add 1/4 teaspoon sesame oil at the end, stir and dish up.
