When I need something to bring up my appetite in the summer days, I think of the tasty, savory bamboo shoots. The tender bamboo shoots are tightly packed in spicy oil in a jar. Along with the Anaheim peppers, they add plenty of exotic flavors to the meat and broccoli. I love the bright green color. It is a beautiful dish all together. But if you are a meat person like me, you probably don’t need the broccoli.

Ingredients and Instructions

1 cup seasoned bamboo shoots, with juice
1 onion, 2 cloves garlic, 1 green Anaheim chile pepper, chopped
1 pound ground pork or ground turkey (90/10 fat)
2 broccoli crowns, cut into small pieces (about 3 cups)
1 tablespoon regular soy sauce, 1 teaspoon sugar
1/4 cup hot water, use as needed
3 to 4 green onions, chopped, for garnish


Season ground pork or turkey with salt and black pepper, garlic salt, mix well. Also add 1 teaspoon sherry wine, and 1 teaspoon cornstarch, mix well, then add 1/2 teaspoon sesame oil, mix again. Set aside.

Quickly saute broccoli with half of the onion for a few minutes, add a little salt and black pepper. When broccoli is about 60% done and still crisp, dish up and set aside.

Add ground pork to a large pan with hot oil, pan fry both sides for a few minutes. Add the onion, green pepper, garlic and bamboo shoots, quickly stir with meat and cook until brown and fragrant. Add broccoli, stir with meat. Add sugar and soy sauce, mix everything together. Add 1/4 cup hot water if needed, cover the pan and cook 1 to 2 minutes until broccoli soften and meat well done. Garnish with green onions. Don’t add sesame oil. Serve with steamed rice, delicious!
