Salmon croquette is a classic southern dish which is made with canned pink salmon, eggs, cornmeal or breadcrumbs, onion and other aromatic ingredients for flavors, shaped into patties then pan fried until golden brown. My co-worker gave me her version of this recipe many years ago. I modified it quite a bit since then. I like the simple southern flavor without having to use too many ingredients. We love to make sandwiches with the leftover patties.

Salmon Patties

Remove large bones and skin from salmon, break into small pieces with a fork. Add celery, garlic and onion, season with salt and black pepper. Add the eggs, cracker crumbs and 1 teaspoon olive oil, also add 1 teaspoon oyster sauce. Mix everything together, we usually get 9 to 10 patties out of the mixture.

Heat 2 tablespoons olive oil in a hot skillet. Gently add patties, cook on medium heat until golden brown on both sides, turning once. Ready in 10 to 12 minutes.

Tips:  Do not saute veggie first. Raw veggie and canned salmon make better tasting patties.

1 can (15 oz) pink salmon, drained
1 stalk celery, finely chopped
2 cloves garlic, finely chopped
1 small onion, finely chopped
2 large eggs, lightly beaten
4 to 5 saltine crackers, crumbled
Olive oil, salt and black pepper as needed

Add the eggs, cracker crumbs and 1 teaspoon olive oil, also add 1 teaspoon oyster sauce. Mix everything together, we usually get 9 to 10 patties out of the mixture.
