Simply Delicious Curry Chicken

There are so many ways to cook chicken with curry. You can make satay and stew. You can pan fry, grill, braise, add vegetables and coconut milk. Japanese style curry chicken is widely popular. Toss a few of your favorite Japanese curry cubes into a pot of water with chicken and vegetables. When it is almost done, add coconut milk to thicken the sauce and add more flavor. You can make it in a pressure cooker or rice cooker, a true one-pot meal to serve with rice. Of course there are many others like Filipino, Malaysian, Korean, Indian, Vietnamese…, just to name a few. The thing to remember is all curry dishes are generally very good and tasty, no matter how it is made.

This is my “go to” recipe whenever I need a delicious meal in a hurry. No special shopping trip is necessary, just chicken and curry powder will make a tasty meal everybody loves. Curry powder is a mixture of turmeric, coriander, cumin, ginger, garlic, chili and other spices. Eating curry often can ease pain and inflammation, increase the liver’s ability to remove toxins from the body, protect the immune system from infections and therefore reduce the risks of getting heart disease, cancer, Alzheimer’s.

Simply Delicious Curry Chicken

Season chicken with a little salt and black pepper, garlic salt, 1 teaspoon wine, 1/2 teaspoon cornstarch, 1/2 tablespoon yellow curry powder, 1/4 teaspoon sesame oil. Mix well and marinate for 15 minutes.

Add olive oil to a large pan over medium high heat, pan fry chicken until firm up a little. Add chopped onion, garlic, stir, stir. Add soy sauce and sugar, then sprinkle the remaining 1/2 tablespoon curry powder on top, continue to cook until brown on both sides and well done. A simple and delicious dish to serve with steamed rice.

Ingredients and Instructions

1 chicken breast, 2 thighs, skinless, each cut into 3-inch long strips
1 large onion, 4 cloves garlic, chopped
1 tablespoon yellow curry powder, divided in half
1/4 teaspoon cayenne pepper, optional
1/2 tablespoon regular soy sauce, 1 teaspoon sugar

 

Season chicken with a little salt and black pepper, garlic salt, 1 teaspoon wine, 1/2 teaspoon cornstarch, 1/2 tablespoon yellow curry powder, 1/4 teaspoon sesame oil. Mix well and marinate for 15 minutes.
