Fermented Black Bean Zucchini Stir Fry

Zucchini has become one of my all-time favorite vegetables in recent years. They are available all year in supermarkets, especially in the summer when they are at their best. Since we are not getting younger anymore, we appreciate food that are tender, easy to prepare, easy to eat and relatively healthy.

On its own, zucchini tastes kind of bland. To solve that problem, I use aromatic ingredients to give the dish a much needed flavor. By using a little bit of fermented black beans and Chinese wine or sherry wine, I magically transform this ordinary dish into a tasty Chinese dish. This is my easy and useful technique for making authentic Chinese food. You can make this dish as simple as you want. Or you can easily jazz up the dish by adding other ingredients to make it as exotic as your taste buds desired.

Fermented Black Bean Zucchini Stir Fry

In a hot pan with oil, add onion, garlic and fermented black beans. Quickly stir fry for about 30 seconds to bring out the flavor. (Add chopped green bell peppers if you like.)

Add the zucchini and quickly stir fry over high heat, add a little salt and black pepper, 1 teaspoon regular soy sauce, 1 tablespoon oyster sauce, stir, stir. Also add 1/2 tablespoon wine (Chinese or Sherry), stir as needed and let it cook until zucchini soft but still crisp. To make it even better, add 1/2 teaspoon sesame oil at the end, dish up and serve. (Tips: I don’t use ginger in this dish. Sometimes I like to use green bell peppers.)

Ingredients and Instructions

2 medium zucchini, cut into bite size pieces
1 medium onion, 2 cloves garlic, chopped
1 green bell pepper, chopped  (okay to skip this, optional)
1 teaspoon fermented black beans, use more or less as you like
salt and black pepper as needed, optional
1 tablespoon oyster sauce
1 teaspoon regular soy sauce
1/2 tablespoon Chinese cooking wine or sherry wine
1/2 teaspoon cornstarch, mix in 2 tablespoons water to thicken sauce if needed
1/2 teaspoon or less sesame oil, garnish at the end, optional

Add 1/2 teaspoon sesame oil at the end. This lovely side dish can be done in 15 minutes. (Tips: I don’t like to use ginger in this dish.)
