Chinese New Year Princess Tofu 貴妃豆腐

Ma Po Tofu 麻婆豆腐 is a very popular menu item in Chinese restaurants around the world with many variations. There are Japanese style ma po tofu, Korean ma po tofu, Vietnamese ma po tofu, Malaysian ma po tofu, Taiwanese ma po tofu and Sichuan ma po tofu. Even though it tastes different from one dish to another, ma po tofu is generally made with lots of spicy red chili sauce and Sichuan peppercorns. For that reason Sichuan ma po tofu is considered more authentic than others. Chinese home cooks have their own way cooking this spicy Sichuan dish, depends on taste and tradition. This tasty dish is fairly easy to make, but hard to get it right. Ma po tofu is known for its pungent Sichuan pepper and chili oil, flavorful and spicy, great to eat with rice.

You will be surprised to know that Princess Tofu 貴妃豆腐 is closely related to ma po tofu, although you can’t find princess tofu in any restaurants. There is such a thing as princess chicken but not princess tofu. I created princess tofu to mirror the main ingredients used in ma po tofu, except I don’t use the spicy stuff. I am a home cook, I can make things happen. A little bit of thinking and a few changes of ingredients, boom, my brain child Princess Tofu is born with grace and style. It is totally up to you whether you want to blench or brown the tofu first before adding to the meat. Either way is fine to me. I have done it both way.

 

Chinese New Year Princess Tofu 貴妃豆腐

Season ground pork or turkey with a small pinch of salt, black pepper and garlic salt. Also add 1/2 tablespoon Chinese Shaoxing cooking wine or sherry wine, 1/2 teaspoon cornstarch, mix well. Add 1/2 teaspoon sesame oil, mix, set aside.

Heat up a saute pan with 1 tablespoon oil, pan fry tofu until light brown on all sides, about 10 minutes, add a pinch of salt. Dish up and set aside.

In a large pan on medium high heat, add 1 tablespoon oil, wait until hot. Add the meat and pan fry until no longer pink, break up large pieces. Push the meat to one side, add a little bit of oil to the pan if too dry. Toss in onion, ginger, black beans and garlic, quickly stir to coat with oil. Mix everything together and cook until fragrant. Add tofu, mix with meat. Season with sugar, soy sauce and oyster sauce, mix well. Add 1/2 cup chicken broth, use more if needed. Cover the pan and cook on medium low heat for about 3 minutes, stir when needed.

Raise the heat to medium high. Stir in the eggs evenly on top, let settle for 1 minute, then mix everything together. Add 1/2 to 1 teaspoon sesame oil, and green onions. Toss, toss, dish up. Serve with steamed jasmine rice. This is a good everyday dish. So delicious I will make it on Chinese New Year.

Chinese New Year Princess Tofu 貴妃豆腐

1 block (14 oz) organic firm tofu, rinsed, drained, cut into small cubes
1 pound (or 12 oz) ground pork or ground turkey, 90% lean
1 medium onion, 3 cloves garlic, chopped
1 tablespoon ginger strips, okay to use more
1 teaspoon sugar, 1 tablespoon or more fermented black beans
1 tablespoon regular soy sauce, 2 tablespoons oyster sauce
1/2 cup low-sodium chicken broth or water, use more if needed
2 eggs beaten for sauce, 1/3 cup chopped green onions for garnish

  1. This is absolutely the best tofu dish I have ever tasted–primarily because it does not have that tofu taste. I would go so far to say that it is the only tofu dish I can eat–so far. And it’s healthy!
