Every time I thought I have finished cooking bitter melons for the season, I found more bitter melons in my garden. The plants still keep producing fruits in the cool weather. That’s okay, I just have to find more ways to consume more bitter melons. Since we have had a lot of meat lately, it is time to cook vegetarian dishes with bitter melons.

Chinese mushroom is one of my favorite ingredients in vegetarian dishes. My pantry will not be happy without these fragrant dried mushrooms. I love their rich meat-like flavor. Using a few of these dried mushrooms in your cooking, any ordinary dish can become a special Chinese gourmet dish. Chinese mushrooms go really well with oyster sauce. I always use them together in my cooking, except soups. To use dried black mushrooms, soak them in water overnight. After soaking, remove the stems, cut the mushrooms into thin pieces. Some dishes require whole mushrooms. The soaking water has a lot of flavor. You can use it to make soups and sauce.

I also love the woody flavor of fresh white mushrooms. They are great in stir fries and soups. These are two of my favorite vegetarian bitter melon dishes using either Chinese mushrooms or fresh white mushrooms, wonderful side dishes in the summer.

Ingredients and Instructions

1 medium bitter melon, sliced
5 to 8 Chinese dried mushrooms, soaked, sliced, about 1 cup
2 medium onions, 4 cloves garlic, chopped, divided in half
1 teaspoon sugar, 1/2 tablespoon soy sauce
3 tablespoons oyster sauce, divided
1 cup low sodium chicken broth, as needed
1 teaspoon cornstarch, mix with 1/4 cup chicken broth
1/2 to 1 teaspoon sesame oil, add to dish last

In a hot wok with oil, saute mushroom with half the onion and garlic, add 1 tablespoon oyster sauce and 1/3 cup low sodium chicken broth, cook until soft, dish up. (Tips: To soften mushrooms, add more liquid, cover the wok and cook 2 to 5 minutes on medium low heat.)

In a clean wok with hot oil, add bitter melon and remaining onion and garlic, quickly stir, season with a pinch of black pepper if you like. Add 1/4 cup low sodium chicken broth to help soften the bitter melons, cook until translucent.

Add mushrooms, mix with bitter melons. Add soy sauce, sugar, and 2 tablespoons oyster sauce, stir and coat with veggie. Cook until soft, stir in cornstarch mixture, half at a time as you need it. Stir and cook until sauce thicken and boiling again, add sesame oil, stir everything together. Serve as a main dish or side dish.

Ingredients and Instructions

1 tray pack (8 oz) white mushroom, sliced
1 medium bitter melon, sliced
1 jalapeno pepper (or ginger), sliced
1 medium onion, 3 cloves garlic, chopped
1 teaspoon sugar, soy sauce, oyster sauce as needed
1 teaspoon cornstarch, mix with 1/4 cup low sodium chicken broth

 

Saute everything (bitter melon, mushroom, onion, garlic and ginger) in a hot wok until fragrant, season with salt, soy sauce, sugar, oyster sauce. Add water or chicken broth, cover and cook 1 to 2 minutes until veggie tender but still crisp. Add cornstarch mixture, half at a time as you need it. Stir to coat with veggie. Quickly stir, cook until sauce thicken and boiling again. Add 1/2 to 1 teaspoon sesame oil, toss, toss, done. Quick and tasty side dish.

Ingredients and Instructions

1 medium bitter melon, thinly sliced
1 tray pack (8 oz) white mushroom, each sliced into 4 pieces
1 medium onion, 3 cloves garlic, chopped
1 teaspoon sugar, 1 teaspoon regular soy sauce
2 to 3 teaspoons oyster sauce, 2 to 3 teaspoons balsamic vinegar
1/2 cup water or low sodium chicken broth, as needed for bitter melon

 

Saute mushroom with half of the onion and garlic until fragrant, add a little salt and black pepper, dish up.

Stir fry bitter melons with remaining half of onion and garlic, season with pinch of salt and black pepper. Add low sodium chicken broth to help soften bitter melons. Add mushroom mixture, stir with bitter melons. Add sugar, soy sauce, stir. Add oyster sauce, balsamic vinegar, stir. Let cook 5 to 6 minutes until fragrant and veggie soft but still crisp. Add chicken broth or water if it gets too dry. Don’t cover the pan. This tasty dish is a vegetarian delight, so easy to make.
