What a month, I am finally writing the last post for my Thanksgiving in July theme. This simple salad is very light and refreshing, easy to make, pretty to look at. We love the red wine vinaigrette. It works well with the salad.

 

Thanksgiving Blueberry Walnut Salad with Vinaigrette

Combine mustard, onion, salt and pepper, honey and vinegar in a medium bowl, mix well. Drizzle in the olive oil while whisking. Olive oil will taste bitter if you over beat it. Set aside for 30 minutes to 1 hour before serving.

Fill a bowl with chopped lettuce, add blueberries and toasted walnuts. Add the red wine vinaigrette along side the salad rather than on the leaves in the center to prevent overdressing. Toss, toss, ready, eat.

Ingredients and Instructions

Dressing  (about 1 cup)
3 tablespoons red wine vinegar
Salt and freshly ground black pepper to taste
1/2 tablespoon Dijon mustard
1 to 2 teaspoons honey, as needed
1 very small sweet onion, peeled, grated
1/3 cup extra virgin olive oil

Salad
Chopped Lettuce, blueberries, toasted walnuts
