Thanksgiving Blueberry Walnut Salad

What a month, I am finally writing the last post for my Thanksgiving in July theme. This simple salad is very light and refreshing, easy to make, pretty to look at. We love the red wine vinaigrette. It works well with the salad.

Thanksgiving Coffee Cake with Topping

Coffee Cake pic1

This is a cake I like to make when I have a whole morning to myself. No work, no schedule, no appointment, as if time just stopped. There are a lot of little steps involved making this cake. But I don’t mind because I have time to enjoy the process. To me it is relaxing and therapeutic to just go through the motions of mixing the topping, whisking the flour. For a little short while, I forget all the things that are bothering me. While my hands are mixing and blending sugar and flour, my mind is unloading messy clutters and stresses. I enjoy running my fingers through the sugar, butter, nuts, cinnamon and smell the heavenly, sweet aroma. It is my kind of mornings to remind me Continue reading

Cooking meatloaf is a good way to stretch the food budget for families. It is table-friendly with plenty of hearty flavor. Meatloaf is served in many diners and restaurants today and is considered a comfort food.

The most common recipe nowadays consists of ground beef, carrots, onions, milk, eggs, worcestershire sauce and breadcrumbs, with a bacon or ketchup topping, cooked in the oven and normally served warm with brown sauce and a side-dish of mashed potatoes or steamed rice. The leftover meatloaf may be stored in the freezer or refrigerator and then made into sandwiches of all sorts, Continue reading

Thanksgiving Candied Sweet Potatoes

Back in the old days we used to make sweet potato sweet soup (番薯糖水) quite often. It was an enjoyable treat to us. I don’t know why but I haven’t had it for a long time.

Sweet potatoes are very inexpensive, easy to prepare, delicious and contain iron, magnesium, potassium, beta carotene, vitamin C, D, B6 and others. They are naturally sweet-tasting no matter how you enjoy them: Roasted, fried, steamed, pureed, baked or grilled. Sweet potatoes are beautiful side dishes on holidays. From sweet potato pies to sweet potato fries, the bright orange Continue reading

Ginger Scallion Rice Pilaf

Rice Pilaf with Peas pic2

Rice is not an exciting dish by any mean. However, it is the most important food in my life. I grew up eating steamed rice since I was a little girl into adulthood. No matter what other scrumptious dishes I might have had, at the end of the day I still wanted a bowl of simple rice. I could not go to bed happy unless I had rice during the day. Rice may appear to be plain and boring compared to many savory Continue reading
