Lettuce with Oyster Sauce (蠔油生菜)

Technically this is not even a recipe because it is so easy to make. But that’s exactly the reason I love it so much. Whenever I want to add some green to my dinner table in a hurry, this is the one to go. In Western culture people like to eat raw lettuce in salads or something like that, which is wonderful by the way. But I don’t care for cold food and raw food that much. That said, I do like eating lettuce every now and then. I like the lovely crunchiness and sweetness. I was surprised to find lettuce in different texture and color, almost too pretty to eat. They really do bring a lot of freshness to a meal.

I used to think only Chinese people like to eat cooked lettuce. Little did I know cooking lettuce has become a food trend in today’s modern kitchens. How about that for a humble iceberg. High heat and quick cooking methods can bring out the natural flavor and texture of green vegetables. It is a beautiful way to enjoy lettuce. All you need is one good quality iceberg lettuce, torn or chopped up in pieces. For flavor, add ginger, oyster sauce and a small pinch of salt if you like. So here we go…

Lettuce with Oyster Sauce (蠔油生菜)

Add 2 tablespoons canola oil to a big wok already on high heat. Wait until the oil is really hot, almost to the point of smoking. Step back from the wok just a little, add lettuce and ginger, quickly stir to coat with the hot oil. If you hear very loud popping sounds that means you are doing it right. Remember, we are wilting the lettuce, not cooking it completely. Add a little salt if you want, and 3-4 tablespoons oyster sauce. Stir and coat the lettuce with oyster sauce, about 1 minute. That’s it, done. Dish up and serve. It takes about 5-6 minutes from start to finish. A nice warm salad, don’t over season it.
