I don’t think I ever cooked a whole chicken that fast before. After a shopping trip to the store, I came home with nothing to eat and I was starved to death. To speed up the cooking process, Lynard helped me to cut the chicken into big pieces. I prepared a simple, everyday marinade with soy sauce and jalapeno peppers. I did not have time to marinate the chicken for 2 hours. We needed food in a hurry. That was the only down side of the day besides the hungry part. But still, the chicken came out pretty good and had a lot of flavor. We loved the slightly spicy jalapeno peppers with soy sauce marinade.

You can use whatever vegetables you want underneath the chicken as long as they get tender when the chicken is done. Root vegetables usually work better in the oven. If possible, I like to get the Chinese turnip (white carrot or lobak – 白蘿蔔) or Korean radish (Daikon) at the Asian stores. They are in season during the winter months, sweet, tender and juicy. Turnips are great for soup or roasted in the oven, make sure you use a lot of fresh ginger and season veggies with oil, salt and black pepper.

Twice Cooked Chicken with Jalapeno Marinade

Combine all the marinade ingredients in a large bowl and whisk to create marinade. (This tasty, all-purpose marinade is good for chicken and pork. I use it all the time.)

1 (4 lb) whole chicken, cut into 6 to 8 pieces. Add chicken and coat evenly with marinade. Cover and marinate in the refrigerator for 2 hours.

Preheat the oven to 375 degrees. Cook time: 40-50 minutes until well done, 175 – 180 degrees internal temperature.

Lightly season carrots, red potatoes, celery, onion and put in the baking pan, cook in the preheated oven while you are browning the chicken on stove top. ( This is the quickest way to get a one pot meal. )

Put 1 tablespoon oil in the skillet over medium high heat on stove top. Lightly brown the chicken on both sides, in 2 batches. Take the baking pan out from the oven. Put the chicken on top of veggies, pour all the pan juice on top, put it back in the oven and continue to cook until well done, about 40 to 50 minutes, uncovered. I like my chicken well done (180 degrees internal temperature.) Casually baste chicken with pan sauce and serve with steamed rice. Love the easy to prepare chicken marinade, lots of flavor. Enough food to feed a big family. It is an excellent one pot meal over the weekend.

Ingredients and Instructions

Chicken marinade:
1 tablespoon olive oil  (or canola oil)
1/2 teaspoon black pepper, 1 teaspoon paprika
2 teaspoons regular salt, according to taste
2 jalapeno peppers, 1 seeded, 1 not, chopped
1 tablespoon minced ginger, 1 tablespoon minced garlic
1 tablespoon regular soy sauce, 1/2 tablespoon dark soy sauce
1/2 tablespoon rice vinegar, 1 tablespoon sherry wine, 2 teaspoons sugar

  1. This chicken dish is very tasty. The hint of spicy and the potatoes with carrots are a good combination. But the chicken is really the star of this dish. I have never tasted chicken white meat as savory and tender. Great job!
